Position Objective
To ensure client satisfaction of all conference space bookings and catered functions by maintaining and managing the highest standards of products and services while maximizing profitability through upselling and cost control. Responsible for all functions within the Catering Sales Operations, including but not limited to, sales strategy, marketing, revenues, service, menus, staffing, and training.
Essential Job Functions
- Responsible for the overall leadership, coordination, and evaluation of Catering Department.
- Work as intermediary between Sales and Catering by receiving definite group turnover, assigning group contracts and following up on all assigned departmental duties.
- Possess the ability to detail any definite booking that is turned over to Catering.
- Maximize revenue opportunity by overseeing the strategic assignment of meeting space.
- Act as a dynamic self starter to build new client relationships and nurture existing relationships
- Assist in the process to establish ancillary group activity needs and programs such as spa, recreation activities, equestrian activities, off site events, transportation, audio visual etc.
- Participate in and conduct regular event order meetings with banquet support staff to ensure accurate service and communication of clients’ needs and desires.
- IVvy key administrator. Responsible for the proper reconciliation of IVvy revenues in relation to monthly P&L reports, which are used for accurate budgeting and forecasting. Regularly audit IVvy for maximum space utilization potential.
- Work closely with Executive Chef to establish strategic menu placements and experiences.
- Hire, train, and oversee all departmental staff.
- Develop monthly forecasts and yearly budgets to maximize profitability.
- Maintain an awareness of competition through continual inspections and reviews of local promotions.
- Ensure guest satisfaction by managing MeetingScope account and event surveys.
- Maintain standard operating procedures for all catering and conference services positions, including corporate requirements.
- Contract yearly vendor agreements.
- Host weekly staff meeting and communicate directly to the Director of Sales & Marketing with all employee engagement outcomes.
- Evaluate skill levels and performance of Catering team members including quarterly/yearly performance reviews and succession plans for advancement.
- Maintain communication between all property departments.
- Perform other duties as assigned by management.
Education/Experience
- 4 year college degree or 10 years of Catering experience in a similar Managerial Role at an luxury Hotel setting and/or equivalent combination of education and experience
- Solid working knowledge of Delphi or other space allocation system preferred

- Training in food preparation and handling techniques, Training in alcohol mixing methods, Management Skills Training, Training in providing quality guest service.
- Be able to work in a hot, cold, wet and loud environment for long periods of time.
- Be able to work in a standing position for long periods of time.
- Be able to reach, bend, stoop and lift up to 60 lbs.
- Be able to work AM/PM shifts, weekends, holidays, over 40+ hours
