Job Profile

The Director of Food & Beverage will oversee and manage the daily operations of all outlets, creating and maintaining established quality and service standards, maximizing profits and controlling expenses. This position requires exceptional leadership and vision. The Director of Food & Beverage is responsible for fostering and developing an exciting, positive, results based environment for the food & beverage team. Must possess strong personal organization, genuine hospitality, and care for staff. Understands and implements contemporary luxury/lifestyle standards.


  • Serves as a spokesperson for the Proper Hospitality brand, upholding its reputation and leading by example
  • Responsible for creating and maintaining a positive working culture for all team members
  • Direct oversight of the hiring, training, coaching, development, and discipline for F&B management team
  • Develops leadership within the organization
  • Liaising with the Executive Chef and supporting the management of the culinary team.
  • Maintain the quality and consistency of the guest experience
  • Responsible for Food and Beverage financial performance including but not limited to:
  • Annual budgeting and operating plans
  • Covers / Revenue Goals
  • Achieving budgeted expense targets
  • Implementing loss prevention controls
  • Liaise with all hotel departments to represent F&B operations
  • Actively drive F&B PR and Marketing strategies/actions
  • Seeks new opportunities and devises strategies for the improvement of the F&B platform
  • Creates and maintains procedural protocol for F&B Operations
  • Maintains compliance with departmental policies, procedures, and standards
  • Regularly evaluates the performance of the F&B operations as a whole
  • Actively manage operations during key business periods
  • Understands local and national business trends and takes actions to ensure programming relevance
  • Work closely with the Human Resources Director to ensure all company standards are met and that the company culture and programs are supported and encouraged
  • Communicate openly and frequently with the General Manager
  • Direct oversight of the hiring, training, coaching, development, and discipline for F&B staff
  • Seek new opportunities and devises strategies for the improvement of the F&B operations
  • Create and maintain procedural protocol for F&B Operations
  • Maintain the quality and consistency of the guest experience
  • Responsible for Food and Beverage financial performance including but not limited to: annual budgeting and operating plans, covers/revenue goals and achieving budgeted expense targets
  • Liaise with all hotel departments to represent F&B operations
  • Oversee the completion of operations reports, financial documentation, guest correspondence, human resources / staff management paperwork, operations evaluations, standard operating procedures, safety and sanitations checklists, ordering and inventory documentation, and PR/marketing tasks

Skills/Knowledge Required:

  • Willingness to learn everything encompassing the Hotel operation in the following departments; rooms, housekeeping, engineering, security
  • Strong written, verbal, and non-verbal communication skills
  • Proactive attitude with strong organizational and time management skills
  • The ability to motivate and inspire others to work cooperatively to achieve a designated goal.
  • The ability to maintain confidentiality of guest information and pertinent data.
  • Flexible schedule - Willing and able to work shift duties that may include evenings, nights, weekends and holidays.
  • Ability to exert physical effort in transporting equipment and wares.
  • Strong problem solving skills
  • Ability to withstand high temperatures, moisture and noise levels in work areas.
  • Ability to endure abundant physical movements in various work areas.

Qualification Standards:

  • Education: 4 Year College graduate or equivalent education preferred
  • Experience: Over 8 years of hospitality experience, and 2 years of previous experience in a similar position preferred.
  • Licenses or Certificates: ServSafe Preferred
