The award winning Alpino Vino is seeking an Executive Chef.  We are looking for the next great talent to lead our kitchen toward culinary brilliance.  This will be the most dynamic role you will ever have.  Our kitchen sits just below 12,000 feet and is located in the basement of a 1,200 square foot mining cabin.  Our chef will learn to brave the elements, drive a snowmobile and deal with remote logistics all while maintaining the culinary excellence that has led to this locations tremendous reputation.  Our candidate must have a minimum of 3 years’ experience leading a high end Italian kitchen, a love of the outdoors and passion for their craft.

This position requires confidence, independent action, initiative, a sense of urgency, and the ability to make decisions and take responsibility for them.  A well-suited candidate can react and adjust quickly to changing conditions and come up with practical ideas for dealing with them.

The chef’s style is purposeful and directed at getting things done quickly.  There is a great deal of challenge and pressure, and people and problems must be handled with confidence and determination.

The position requires a self-disciplined person who can handle details as long as they are only an intermittent aspect of the job, and not the primary responsibility.  This job requires self-assurance and competitive drive. There is a strong demand for high quality, organized and repeatable results.  The responsibilities are broad in scope, encompassing a wide variety of activities requiring rapid shifts in priorities.

This is primarily a task-focused job, requiring a somewhat authoritative, directive leadership style that encourages results-driven, task-oriented collaboration.

  • Helps create and ensure an atmosphere that is comfortable to our employees and guests and enhances the total experience while producing a positive perceived value for every dollar spent.
  • Can lead and train a varied work force with a diverse background of experience.
  • Participates in the review of menus, analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu items.
  • Plans or participates in planning menus and utilization of food to control surpluses and leftovers, taking into account probable number of guests, market conditions, popularity of various dishes, and regency of menu.
  • Works with restaurant GM to ensure a safe and well maintained facility.  
  • Develop and implement a weekly in house training program for things such as safety, sanitation, bartending, butchering, and basic steps of service for front line staff.
  • Maintain all health codes and sanitation requirements.
  • Loves what they do.
