ABOUT THE ROLE 

As the Director of Food and Beverage, you will embody the  brand as an authentic, approachable, adventure-curious, sociable, and savvy leader; You will build and lead a team who exemplifies our values of fostering human connection, providing unique experiences, enjoying life outside, working hard to achieve our goals, all while valuing good people, good food, and good ambiance. 

You will be responsible for assuring attentive, friendly, authentic, and efficient service in all Food and Beverage experiences at VOCO - The Shelby including our Cafe service, Events, Banquets, and Exterior Experience Zones including pool, fire pits and pop-up spaces, while maintaining adherence to budgeted payroll and overhead cost.  

You will possess high levels of energy, creative prowess, and the ability to execute year-round experiences for guests and the community; by activating physical spaces, creating meaningful collaborations and activations at the hotel. 

SCOPE OF WORK + TEAM 

  • Manages Food and Beverage experiences across the property, ensuring alignment with brand values and guidelines, impeccable and approachable guest service, and efficient and effective processes that enable a strong financial adherence to budgeted expectations. 

  • Makes meaningful connections with all guests by exhibiting an authentic and warm sense of interest, and anticipation of their needs, responding promptly to requests and concerns to always maintain positive guest relations.  

  • Monitors, develops and implements schedules for the operation of all restaurants, catering, events and bars to achieve a profitable result while controlling labor cost/payroll. 

  • Implements effective cost controls of food, beverage, and labor costs. Monitors the Restaurant, Catering, Event, and Bars budgets to ensure efficient operation and that expenditures stay within budget limitations, including achieving budgeted revenue and labor expenses.  Maximizes food and beverage department profitability. 

  • Regularly reviews and evaluates the degree of customer satisfaction of the entire front of the house food and beverage operation, recommends new operating and marketing policies whenever a change in demand, customer dissatisfaction, or a change in competitive environment requires.  

  • Investigates and resolves food quality and service complaints in partnership with the kitchen team.  

  • Develops, along with operations team, operating tools necessary and incidental to modern management such as budgeting, forecasting, purchase specifications, cost controls, job descriptions, etc. 

  • Loves connecting with people. If not already immersed in Myrtle Beach’s diverse & vibrant culture, possesses the charisma to rapidly build relationships as VOCO – The Shelby establishes itself as a communal hub.  

  • Enjoys and excels at organizing and producing events, parties, games, and other forms of entertainment. Provides opportunities for guests (and locals) to chill out as well as make active memories. Coordinates with property operational team to execute Food and Beverage activities property wide. Brings to life the team's shared vision with the guided assistance of all operational teams. 

  • Plans, organizes, and executes events in a timely fashion and within budget parameters.  Ensures all relevant stakeholders/team members are informed and prepared. 

  • Partners in curating the daily vibe of the hotel - ensuring that everything from the playlists in the common spaces to the visual aesthetics, scents, and textures throughout are consistently on-brand. 

  • Embraces teamwork, cooperates, and communicates well with colleagues and team members in all areas of the hotel’s operation.  

ONGOING + EVERYDAY TASKS: 

  • Financial Management: 

  • Oversees scheduling, food & beverage budgeting, ordering and supply inventory for food, beverage, events, entertainment, and catering. 

  • Monitors and ensures all cashier and financial procedures are in accordance with accounting policies and standards. 

  • Department & Property Oversight: 

  • Will support front of house and kitchen operations.  

  • Tours and visually inspects the restaurant, bar, pool, firepits, event spaces, and all guests experience zones daily. 

  • Monitors experiential touchpoints, cleanliness, and quality of product and service. 

  • People Leadership: 

  • Demonstrates leadership through effective communication and interpersonal skills. 

  • Encourages trust, respect, and cooperation among team members. 

  • Coaches and develops team members. 

  • Models appropriate behaviors and fosters a culture of excellence. 

  • Collaborate closely with front office, housekeeping, maintenance, revenue, marketing, and sales, managers and teams. 

  • Event Management: 

  • Organizes events, programming, parties, gatherings, experiences, activations, and other forms of entertainment on property. 

QUALIFICATIONS: 

  • Strong leadership, communication, and organizational skills. 

  • Service-oriented with exceptional customer service and sales skills. 

  • Ability to multitask in a fast-paced environment. 

  • Experience managing banquets and events. 

  • Excellent knowledge of food, beer, wine, and cocktails. 

  • Food and Beverage experience in a hotel or resort environment preferred. 

  • Certified in Alcohol Beverage, Food Handling and CPR preferred. 

  • Upholds the brand's authentic, approachable, adventure-curious, and sociable characteristics. 

  • Must be able to work weekend and evening shifts, including Fridays & Saturdays and events as needed.

  • Acts as an Exceptional Innkeeper, Local Ambassador, Charming Storyteller, Community Builder, Adventure Facilitator, and Unique Experience Designer.

Qualifications

EXPERIENCE:

  • Prior Experience:
    • 10+ year experience in food and beverage, three of which should be from a management level
  • IT Expertise:
    • Advanced knowledge of computer software (including Microsoft Office, outlook) and web analytics tools is preferred.
  • Education:
    • Four-year college degree preferred
    • Food Service Sanitation. Alcohol Service Permit (if state-required). CPR certification preferred.
  • Subject Expertise:
    • Thorough knowledge of food and beverage operations including foods, beverages, supervisory aspects, service techniques, and guest interaction
    • Considerable skill in math and algebraic equations using percentages
    • Ability to walk, stand, and/or bend continuously to perform essential job functions.
    • Ability to communicate in English, both orally and in writing, with guests and employees, some of whom will require high levels of patience, tact, and diplomacy to defuse anger and to collect accurate information and to resolve problems.
    • Ability to work under pressure and deal with stressful situations during busy periods.
    • Ability to access and accurately input information using a moderately complex computer system.
    • Demonstrate a working knowledge of all property safety and security procedures as required maintaining a secure and safe environment for employees as well as guests.
    • Report any unusual occurrences and/or request to Supervisor.
    • Read and abide by all the regulations and rules of conduct stated in the Associate Handbook.
    • Must be service oriented with excellent customer service and sales skills
    • Must be able to effectively communicate to guests, management, and coworkers and read, write and understand the English language
    • Must be energetic and outgoing
    • Must possess excellent interpersonal and organizational skills
    • Must be able to follow directions with attention to detail, speed and accuracy
    • Must be a team player with the ability to work under minimal supervision
    • Must be able to multi-task in a fast-paced work environment
    • Must be able to understand and work with basic financial information and solve basic arithmetic problems
    • Must be able to type 45 wpm and have the ability to input data and access information on the computer
    • Must have proficient working knowledge of Microsoft Office, Opera; preferred.
    • Must be able to exercise confidentiality and discretion.

OTHER EXPECTATIONS:

  • Abide by payroll policies, procedures and rules of conduct as stated in the Springboard Hospitality Associate Handbook.
  • Demonstrate a working knowledge of all company safety and security procedures.
  • Travel required: As needed for hotel familiarization, content creation shoots and to meet with colleagues.
  • Hours Required: Must primarily work during Springboard Hospitality business hours, Monday - Friday 8am - 5pm (PST), while understanding that the hotel business functions 24/7 and some weekend or holiday work may occasionally be required.
