POSITION SUMMARY: The Food & Beverage Manager is responsible for overseeing the complete operations of the Food and Beverage Department. The Food & Beverage Manager must ensure the quality of food, beverage, and service is consistent with company guidelines, as well as ensuring the profitability of the Food and Beverage Department.

ESSENTIAL DUTIES & RESPONSIBILITIES include but are not limited to:

  • Prepare the annual food and beverage budget.

  • Prepare monthly forecast for food and beverage needs and expenses.

  • Perform Human Resource functions for staff, including scheduling, evaluating and training staff.

  • Review monthly profit and loss statements and prepare critique and action plans for improvement as needed.

  • Assist in designing concepts and merchandising techniques for the food and beverage department.

  • Establish pricing for food and beverage items with consultation of the Executive Sous Chef and Dining Room Manager.

  • Establish and control, through department heads, payroll and other operating expenses in the Food and Beverage Department.

  • Establish all policies and procedures for the Food and Beverage outlets through direct visual inspections on a continuous and consistent basis.

  • Develop and implement the annual marketing plan with assistance of department heads.

  • Hold periodic meetings with staff to review past and future performance service, quality and general information concerning guest and employee relations.

  • Performs all functions of F&B staff when needed due to either operational need or labor control

  • Ensure proper inventory control, including limitation of waste.

  • Ensure proper sanitation expectations are met.

  • Oversee all F&B Outlets.

  • Provide weekly P&L reports.

  • Provide Food and Beverage weekly updates.

  • Ensure food cost and beverage cost goals are met.

  • Train and develop the team.

  • Ensure guests are happy and satisfied with food and beverage services.

  • Ensure proper purchasing procedures are followed.

  • Review and evaluate menu pricing.

  • Perform other duties as assigned.

  • Ability to work in a fast-paced work environment with the ability to adapt to change quickly.

  • Must be able to work nights, weekends and holidays as needed. Schedule varies according to business demands and needs.

  • Ability to work both independently and as a team player. 

  • Must be detailed oriented, able to plan, prioritize, multi-task and meet deadlines in a past paced environment.

  • Excellent managerial skills.

  • Ability to teach, train, mentor, evaluate and motivate staff.

  • Good decision-making skills, with the ability to analyze information, evaluate results, and implement the best solution to solve problems or challenges.

  • Good comprehension and communication skills, with the ability to listen to and understand information and ideas presented through written and verbal communication.

  • Experience in providing effective and documented coaching and feedback, the courage to verbally counsel below expectation employees.

  • Ability to exercise good judgment and self-control.

  • Enthusiasm, good attitude, trustworthiness, personal integrity and honesty.

  • Ability to work autonomously and understand when a superior needs to be involved in decision making.

  • Self-motivated, with a dedication to keeping up to date technically, and applying new knowledge to your job.

  • Demonstrated ability to operate safely in the workplace, with experience in holding peers and direct reports accountable to safety standards.

QUALIFICATIONS

  • Must have 4-year degree in related field.

  • Minimum of 5 years industry experience.

  • Computer skills, with a strong working knowledge of the primary Microsoft Office programs.

  • Ability to successfully pass a background check, including a clean driving record, and other pre-employment screening.
