Essential Duties
- Establishes and fosters the highest level of working relationships with all stakeholders to create alignment and successful execution of F&B objectives. Achieves partnerships based in communication, clearly communicated objectives, measured outcomes and accountability.
- Evaluates all aspects of F&B operations and collaborates with property level and corporate support to define and achieve strategic and operational success.
- Collaborates to ensure property-level F&B strategies align with and support overall property strategic objectives.
- Reviews and analyzes operational and financial data to ensure the highest level of F&B performance against operational and strategic objectives. Works with property level leadership to make data-driven decisions to optimize operations.
- Provides consistent and frequent collaboration and engagement with property level leadership in alignment with the Club Matrix Index and Corporate F&B leadership direction.
- Collaborates with property level senior leadership in assessment, mentoring, development, retention and recruitment of F&B management and staff.
- Provides hands-on operational support, when directed, to resolve property-level F&B leadership staffing challenges or operational need.
- Provides operational expertise and guidance related to all areas of F&B operations in collaboration with property level leadership.
- Actively supports property level financial planning, including budgeting, forecasting, revenue modeling, payroll projections and controls, cost of goods projections and controls and any other operational areas to support achieving F&B objectives.
- Actively participates with the property level F&B leadership to ensure menu offering, pricing and structures align with F&B strategy and supports the highest level of consistent quality of execution.
- Collaborates with property level F&B leadership to optimize procurement practices and fully leverage Troon procurement partnerships.
- Collaborates with property level F&B leadership to ensure compliance with Troon standards relating to all areas of F&B operations.
- Collaborates with Troon’s corporate F&B team to achieve optimal performance in all areas. Actively supports and participates in corporate initiatives, meetings, and project deliverables.
- Supports RFHSD project deliverables when appropriate and directed.
- Regular and reliable attendance.
Education/Experience
Bachelor’s degree (BA) from four-year college or university; or five years related experience and/or training; or equivalent combination of education and experience.
Additional Job Requirements
Extensive and frequent travel required, both regionally and remote. Travel may be scheduled with limited or no notice. The trips may be muti-day or longer.
Minimum 3-year tenure as a Culinary exempt manager, leading and mentoring a high level team of professionals achieving a superior level of member and guest satisfaction
Physical Demands
Frequently stands, walks, tastes, smells, talks, listens, uses hands, and reaches with hands and arms. Occasionally sits, climbs, balances, stoops, kneels, crawls or crouches. Occasionally lifts up to 50 pounds.
Environment/Noise
