Position Summary

Assists in direct supervision of culinary staff, food production, scheduling, training, maintaining quality standards and food cost control to create quality food products.

The Sous Chef will assist the Manager in preparing food for Café on the property and have move up opportunities to work in the new restaurant on the property that is currently under construction. The Sous Chef shall also work with the Manager to coordinate a variety of aspects to open the restaurant and have a fully operational facility.

Pay Range: $55,000 - $60,000

Specific Responsibilities
  • Oversees and manages food preparation for a specific area of the kitchen (i.e. restaurant line, banquets, shifts). Supervises and ensures production of consistently high-quality
  • Adheres to established control procedures for cost and quality such as food production charts, par inventories, standardized recipes, use records, food costing sheets, etc.
  • Ensures all recipes are followed and prepared on a consistent
  • Monitors and checks the maintenance of all kitchen equipment
  • Maintains a quality sanitation
  • Maintains and implements daily food prep
  • Assists with the ordering of all food
  • Assigns duties to associates for efficient operation of the
  • Maintains and evaluates existing food concepts. Assists in the development of new food
  • Assists in the achievement of budgetary objectives for the Food and Beverage
  • Process requisitions for supplies quickly and
  • Promotes effective communication among the operational departments that interact with the kitchen such as Banquets, Restaurant and Snack
  • Trains and supervises associates in the proper preparation of menu items and operation of equipment.
  • Ensures proper receiving, storage (including temperature setting) and rotations of food products so as to comply with health department

Experience/Background/Knowledge
  • Certificate from college, technical school or accredited facility; or three to six months related experience and/or training; or equivalent combination and experience.
  • High level of professionalism.
  • Comfortable working with a team in a fast-paced kitchen environment.
  • Excellent verbal communication and organization skills.
  • Physical Requirements
  • Must be able to work in a fast-paced, high energy, and physically demanding environment
  • Must be able to spend 90% of working time standing, walking, and reaching and 10% of working time sitting.
  • Pushing, pulling and lifting objects from a lower to higher position or moving objects horizontally, from position to position.
  • Maintaining body equilibrium to prevent falling while walking, standing or crouching in narrow, slippery, or erratically moving surfaces.
  • Will be required to use physical capabilities including climbing and ascending or descending ladders, stairs, and ramps.
  • Must be able to carry loads greater than 35 pounds and exert up to 50 pounds of force occasionally, and/or up to 30 pounds of force frequently.
  • Must be able to communicate clearly with our guests in the primary language of the club, specific to location. (Primarily English).
  • Hearing sounds at normal speaking levels with or without correction.
  • Specific vision abilities include close, distance, color, peripheral, depth perception and the ability to adjust focus.

About the Community

Verdana Village consists of 2,138 acres of development property located in Estero, Florida. The community has approximately 800 homes built and will consist of 2,400 homes at project completion. The community amenities include a 50,000 Square Foot Sports Complex with (2) indoor tennis courts, (4) indoor pickleball courts, indoor basketball court, indoor volleyball, café, fitness, pro-shop, and administrative offices.
