Job Overview 

Deliver food and beverage orders, retrieve and serve alcoholic, non-alcoholic beverages and food orders to guest lounges according to hotel specifications, courteously and efficiently.  Also assists in the maintenance and re-stocking of Pool & Beach food and beverage areas (service huts, breakdown stations and kitchen runner’s station).

Duties And Responsibilities 

• Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
• Maintain complete knowledge of correct maintenance and use of equipment.   Use equipment only as intended.
• Resolve guest complaints, ensuring guest satisfaction.
• Monitor and maintain cleanliness, sanitation and organization of assigned work areas.
• Be familiar with all hotel services/features and local attractions/activities to respond to guest inquiries accurately.
• Maintain complete knowledge of:

1. Lounge & Cabana numbers, room capacity, hours of operation, proper table set-up and dress code of the Pool & Beach.
2. All liquor brands, beers and non-alcoholic selections, correct glassware and garnishes in the Pool & Beach.
3. The particular characteristics and description of every food and beverage item on the Pool & Beach menu.
4. All menu items, prices, preparation method/time, major ingredients and quality standards, taste, appearance, texture, serving temperature, garnish and method of presentation.

• Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and driving while under the influence.
• Complete opening side duties as assigned:

1. Check quality and amount of all Pool & Beach stock and supplies using checklist.
2. Fold napkins.
3. Restock all necessary supplies for Pool & Beach food and beverage services.
4. Set up all condiments and beverages (non-alcoholic).
5. Ensure a sufficient supply of all silverware, glassware and chinaware for service.
6. Check cleanliness and condition of assigned stations and service areas; rectify any deficiencies.
7. Set up side stations with supplies and equipment.
8. Organize assigned stations and ensure readiness prior to guest arrival.
9. Review daily specials and maintain awareness of 86'd items throughout the shift. 

• Retrieve all alcoholic beverage items from bar and serve to guest.
• Open and serve wine/champagne bottles.
• Make all varieties of coffee.
• Serve all food courses and non-alcoholic beverage items to the guest.
• Guide the activities of the assigned Bus person to ensure optimum service to guests.
• Clear each course.
• Remove soiled wares from areas as assigned and transport to stewarding area.
• Extend appreciation for guest patronage and invite them to return.
• Clean and reset tables immediately after guest departs.
• Complete closing side duties:

1. Properly breakdown and store all reusable goods.
2. Clean all equipment.
3. Restock items for next service.
4. Remove all dirty linen.
5. Marry and stock all condiments.
